A very simple, gluten-free donut recipe

I devised this very simple gluten-free donut recipe after my four-year-old son went on a sugar binge and basically polished off a whole box of chocolate cookies when we weren’t looking. Donuts are as unhealthy, you may be thinking, but it’s difficult to ask little children to stop eating sugary foods completely, especially if they are exposed to it in their kindergarten and school. I try to recreate these foods at home with healthier ingredients that don’t spike their blood sugar and are more nutritious than the store-bought option.

For this recipe, I used my favorite homemade gluten-free flour mix with amaranth and browntop millet. Organic coconut sugar is one of my favorite sugar subsitutes. It’s not really low on calories, but it has a nice flavor and is slightly more nutritious than regular table sugar. You could skip it and use brown sugar or refined sugar instead.

For this recipe, I used my homemade flour mix with amaranth and browntop millet flour. Instead of refined sugar, I used coconut sugar, which is slightly more nutritious and has a marginally lower glycemic index compared to refined sugar. Feel free to use what you prefer.

  1. Mix the flour with the eggs, sugar and butter in a large bowl
  2. Separately, in a small bowl, crumble the yeast and mix with a little bit of milk. Then, add to the flour mix.
  3. Using a kneading hook or your hands, pour the milk slowly into the mixture to form a smooth ball of dough
  4. Let the dough rise for about an hour
  5. Dust a smooth surface (your kitchen top or a cutting board) with some flour and roll out the dough until it’s about 5mm thick.
  6. Use a donut cutter to cut out the donuts. I used a tumbler to cut out the outer rim and a cookie cutter for the inner circle. Once you’ve cut out all the donuts, roll up the remaining dough together and flatten it again to cut more pieces.
  7. In a frying pan, heat the oil on medium/high heat until it’s very hot. Slowly ease in one donut at a time with a slotted spoon. The donuts will swell up. Fry until golden and set aside to cool.
  8. Spread the six tablespoons of caster sugar on a plate. Roll the donuts over the sugar to coat completely.
