Hi all, summer’s almost over, but this delicious recipe for a salsa dip will definitely help in prolonging the holiday mood – even if for a little bit.
This recipe was sent to me by my dear friend, Jessie Wingard, who is spending the last of this year’s summer days at Lake Garda in Italy.
It tastes great as a salad and or as a dip or as a topping on bread to beat hot summer temperatures.
Here’s the recipe for Salsa del Garda:
Ingredients:
6 medium-size tomatoes, diced
1/2 red capsicum, diced
3 lemons, juiced and rind finely grated
1 tablespoon masala spice (you can try using some garam masala mix. Click here for recipe)
1 medium-size white onion, diced
Handful fresh flat-leaf parsley, chopped, plus extra sprigs to serve
1 teaspoon olive oil
Salt and pepper to season
Make it:
Place all ingredients in a bowl, mix together, season to taste.
Garnish with parsley.
Serve
