This version for baked feta and vegetables uses zucchini, mushrooms, tomatoes and string beans with dried thyme to create a quick, flavoursome and gluten-free dish.
Sheet pan feta and veggies
Description
This oven roast uses feta, mushrooms, beans, tomatoes and zucchini. I like the flavour of baked feta with tomatoes and often vary the other vegetables depending on what I have at home or what’s in season.

- Pre-heat the oven to 200 degrees celsius.
- Wash the vegetables and the mushrooms.
- In a big bowl, toss the tomatoes, mushrooms, beans and zucchini with the olive oil, salt and pepper. You can toss them separately, if you want to arrange them separately on your sheet pan. Otherwise, toss together.
- Place on the sheet pan as desired. Make sure the vegetables have some space to roast. Add the slab of feta on top and roast for 30 minutes.
