Hammermühle’s gluten-free breadcrumbs substitute

Hello everyone! Here is my first-ever product review of a gluten-free breadcrumbs substitute.

I was actually looking for a good recipe to make gluten-free breadcrumbs at home when I came across Hammermühle’s gluten-free breadcrumbs substitute. Hammermühle have a whole range of gluten-free products in Germany, where I live, so I was obviously very happy to find them in the supermarket and not have to go through the trouble of making my own substitute at home.

What it contains

A packet of Hammermühle’s gluten-free breadcrumbs substitute ( Hammermühle Paniermehl Klassisch Glutenfrei Laktosefrei – that’s what it’s called in Germany) costs 2.99 euros. The packaging is made of sturdy plastic and you can store the leftover breadcrumbs in it after the first use. The main ingredients are potato flour, rice flour and guar seed starch, which is used as a binding agent. The product also contains traces of milk, sesame seeds, lupin seeds and egg yolk.

Having bought a packet of the breadcrumbs, I decided to have a go at making chicken nuggets at home – it’s a treat because it’s almost impossible to find gluten-free chicken nuggets anywhere. Anyway, here’s what I found.

Pros and cons

The breadcrumbs are very easy to use. I first coated the pieces of chicken with egg and then rolled them on a plate with the gluten-free breadcrumbs. I then fried the nuggets in hot oil. The breadcrumb layer didn’t fall apart and the nuggets had a crisp, golden crust, just as I wanted. They also needed no extra seasoning.

I did feel, though, that the nuggets soaked up too much oil. But fried food is hard on the stomach anyway, so no complaints there. I also found it odd that the ingredients list said there might be traces of milk, but the box said the product was lactose-free.

I am not lactose intolerant, so this is not a problem. However, the fact that the breadcrumbs contain egg yolk, soya lecithin, sesame seeds and traces of nuts might mean that people with allergies to these things should be extra careful with this product.
